NoChicken Chunks Yellow Curry with Rice
A yellow curry with rice? Then the tender Vegan NoChicken Chunks from De Vegetarian Butcher cannot be missing. Serve the spicy meal, including the creamy sauce, with al dente sugar snap peas and mini corn on the cob.
Ingredients
- 1 box NoChicken Chunks of 160 g
- 1 onion
- 200 g sugar snaps
- 125 g white rice
- 2 tbsp sunflower oil or peanut oil
- 230 g mini corn cobs (canned)
- 1 tbsp curry powder
- 125 ml coconut milk
- 3 sprigs of coriander
- salt
Prepare
Tear the NoChicken Chunks into slightly smaller pieces with your fingers. Peel and finely chop the onion. String the sugar snaps. Cook the rice according to the instructions on the packaging.
Heat the oil in a casserole and sauté the onion, stirring occasionally, until golden brown and translucent. Add the sugar snaps and corn and cook for 3 minutes. Add the curry powder and a splash of water, and bring everything to a boil while stirring. Let everything simmer gently over low heat for 1-2 minutes.
Pour in the coconut milk and bring everything to a boil. Stir in the NoChicken Chunks and heat for another 2 minutes while stirring. Meanwhile, roughly chop the coriander leaves and sprinkle them over the curry.
Serve with the white rice on the side.
